Sweet Potato ; The sweet potato is a dicotyledonous plant that belongs to the family Convolvulaceae. Its large, starchy, sweet-tasting, tuberous roots are an important root vegetable.
- Sweet Potato Large (I ration 1/2 of a large sweet potato per person)
- Olive Oil
- Salt & Pepper

Wash and peel sweet potatoes. Cut in half and then cut in half again. Slice thin.
Put foil on pan. I highly suggest this because sometimes they stick even if you use oil on the pan.
After placing the foil on the cookie sheet, spray a cooking spray generously onto the foil.
Place the sweet potato slices onto the sheet into a single layer. Do not over lap because they won't cook evenly.
After this, drizzle olive oil on top of the potatoes. Then salt and pepper to taste.
Place in oven at 450 degrees. After 15 minutes carefully stir potatoes, but make sure they are in a single layer before closing the oven door. Bake for another 15 minutes.
